Cockney rhyming slang, used in London's East End since the 19th century, replaces ordinary words with rhyming phrases, then often drops the rhyming word — so 'stairs' becomes 'apples and pears,' shortened to just 'apples.' Some historians believe it was developed by street traders and criminals to communicate without being understood by police or outsiders. Many Cockney slang terms have entered mainstream British English.
